A long time ago there was a pair of office buddies who were more interested in hunting out good food joints than doing ‘serious’ work. From chimney soup in a crumbling building, biryani at a seedy joint that had plastic table covers to fancy fare at fine dines – they relished every delicious meal.
One of the hunger treks got them to a newly opened restaurant called Taaja’s, off Ballygunge Circular Road in Calcutta. Buddy 1 insisted they served an amazing dish called Bacon Cheeserella and Buddy 2 refused to believe him since she lived next door and only knew of their famed Khow Suey. She soon had to eat her words because the Bacon Cheeserella was all kinds of delicious.
Years have passed, Taaja’s has moved locations and she has moved cities.
It was a beautiful rainy morning which made her want to cook something different. Out of the blue came the memory of that old favourite dish and she wondered if she could create her version of it. And she did, adding corn on a whim, for some colour. It made a perfect meal teamed with slow roasted tomatoes and salads.
She made the dish some time ago but was too lazy to write about it. The almost tricolour caught her eye and she thought, why not today…
Her note to self: Feel free to add more bacon because there isn’t anything in the world like ‘too much bacon’!
Disclaimer: She admits that her Bacon and Corn Rice, though delicious is not in the same league as the dish it is inspired by. Bibi Sarkar’s Bacon Cheeserella was magic and she would love to have some again!
